Honey Chicken Stir-Fry
- 1lb boneless chicken breasts cut into bite size pieces
- 1 garlic clove
- 3 tsp olive oil
- 3 tbs honey
- 2 tbs soy sauce
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/4 tsp ginger
- 1 package stir fry veggies (kroger)
- 1 or 2 peppers chopped
- hot cooked rice
Heat your skillet on med high heat. Add olive oil, only when your pan is hot. Then add the chicken. Don’t forget to start your rice!
Saute tip: Try not to move the chicken too much. Leaving it alone gives a nice color and adds flavor. Plus it will naturally {release} from the bottom of the pan when cooked! (if you are not using a nonstick pan)
When its got a nice brown color add the soy sauce & honey and coat well
. Let chicken simmer for a couple minutes. I also add my salt, pepper, ginger & garlic at this time.
While the Chicken is simmering, chop your pepper and any other veggie you want in your stir fry. We love kroger’s already mixed fresh stir fry veggies. (next to the salads) You could easily use frozen or chop your own.
Set chicken aside and toss veggies in remaining soy sauce & honey. I usually add more of both at this point, but we like a lot sauce. Let veggies cook until tender then add chicken again.
Mix everything together until heated through and then sprinkle some cornstarch on just to thicken it up a bit.
Serve over rice and enjoy your meal!
